In a large mixing bowl, combine the shredded chicken, mozzarella cheese, softened cream cheese, minced garlic, dried oregano, smoked paprika, salt, and pepper. Stir well until all ingredients are evenly mixed and the mixture is creamy.
Lay one tortilla flat on a clean work surface. Spoon 1/4 of the chicken mixture into the center of the tortilla. Top with a handful of chopped spinach and a few halved cherry tomatoes for added color and freshness.
Fold the two sides of the tortilla inwards, then roll it tightly from the bottom upward, ensuring the filling is securely enclosed. Repeat this folding and rolling process with the remaining tortillas and chicken mixture.
Heat a skillet over medium heat. While the skillet warms, lightly brush the outside of each wrap with olive oil to help achieve a golden, crispy exterior.
Carefully place the wraps seam-side down in the heated skillet. Cook for approximately 3-4 minutes or until the bottom is golden brown. Flip the wraps gently and continue to cook for an additional 3-4 minutes on the other side until heated through and both sides are perfectly crisp.
Once cooked, remove the wraps from the skillet and allow them to cool for about one minute. Using a sharp knife, slice each wrap in half diagonally to showcase the colorful filling.
