Instructions
Preheat the Oven: Set your oven to 325°F (160°C) and allow to preheat fully while you prepare the crust and filling.
Make the Crust: In a medium-sized mixing bowl, combine the chocolate graham cracker crumbs and melted butter. Mix well until the crumbs are evenly moistened.
Form the Crust: Spoon the crumb mixture into individual cupcake liners or a mini cheesecake pan, pressing the mixture firmly into the bottom to create an even crust. Bake in the preheated oven for 8–10 minutes until slightly set, then remove from the oven and let cool completely.
Prepare the Cheesecake Filling: In a large mixing bowl, use an electric mixer to beat the softened cream cheese until it becomes smooth and creamy.
Add Sweetness: Gradually add the powdered sugar to the cream cheese while mixing at a low speed. Continue mixing until all the sugar is fully incorporated and the mixture is lump-free.
Incorporate Sour Cream and Vanilla: Mix the sour cream and vanilla extract into the cream cheese mixture until everything is well-blended and smooth.
Add Chocolate: Fold in the melted chocolate gently using a spatula or wooden spoon. Be careful not to overmix; just combine until no streaks remain.
Fill the Crusts: Spoon the cheesecake mixture evenly over the cooled crusts in your cupcake liners or cheesecake pan, smoothing the tops if necessary.
Bake the Cheesecakes: Place in the oven and bake for 20-25 minutes. The edges should be set with the center still slightly jiggly.
Cooling Down: Once baked, turn off the oven and leave the cheesecakes inside with the door slightly ajar for an additional 20 minutes. This will help prevent cracking. Afterward, remove them from the oven and allow to cool to room temperature.
Chill: Once cooled, transfer the cheesecakes to the refrigerator. Chill for at least 2 hours, or until they are fully cold and firm.
Serve: Before serving, generously top each cheesecake with a dollop of whipped cream. Lightly dust with cocoa powder for an elegant finish.
Add Gnome Garnish: Finally, place a gummy gnome atop each cheesecake to add a playful touch that will delight your guests!
