Instructions
In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes.
Stir in the minced garlic, diced carrots, and diced celery. Continue to cook for an additional 5 minutes, stirring occasionally.
Add the shredded chicken to the pot, mixing thoroughly with the softened vegetables.
Pour the chicken broth into the pot, stirring well. Raise the heat to bring the mixture to a gentle boil.
Once boiling, introduce the potato gnocchi to the pot. Cook according to the package instructions, usually around 2-3 minutes.
Lower the heat to a gentle simmer. Stir in the heavy cream, dried thyme, and oregano. Season with salt and pepper to taste.
Gently fold in the chopped spinach and allow it to wilt for about 2 minutes.
Remove from heat and ladle the creamy chicken gnocchi delight into serving bowls. Garnish generously with grated Parmesan cheese.
