Instructions
In a medium mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until it reaches a smooth and creamy consistency, free of lumps.
Gradually sift in the powdered sugar, continuing to mix until the sugar is thoroughly incorporated and the mixture is smooth and creamy.
In a separate bowl, use a hand mixer to whip the chilled heavy cream along with the pure vanilla extract until soft peaks form. Be careful not to overbeat, as you want the cream to remain light and fluffy.
Using a spatula, gently fold the whipped cream into the cream cheese mixture. Carefully combine until well blended but still airy, creating a light and fluffy cheesecake filling.
In a large trifle dish or individual serving cups, begin layering the ingredients. Start by adding a generous portion of the crushed chocolate cookies to the bottom of the dish.
Spoon a layer of chocolate pudding over the crushed cookies, spreading it evenly to cover the cookie layer.
Next, add a layer of the cheesecake filling over the pudding, smoothing it out for an even look.
Continue the layering process, alternating between crushed cookies, chocolate pudding, and cheesecake filling until the dish is filled. Aim to end with the cheesecake layer on top for a polished finish.
Cover the trifle with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld together and for the trifle to firm up nicely.
Just before serving, sprinkle the top generously with grated dark chocolate. Decorate with fresh berries and a few sprigs of mint leaves for a vibrant touch.
