Instructions
In a large mixing bowl, use an electric mixer to beat the softened butter and powdered sugar together until the mixture is light and fluffy, approximately 3-4 minutes.
Add the egg yolk, vanilla extract, almond extract, and salt to the butter-sugar mixture. Mix on medium speed until all ingredients are thoroughly combined.
Gradually sift the all-purpose flour into the mixture. Mix at low speed just until the dough starts to come together, being careful not to overmix, as this can affect the texture.
Divide the dough into two equal portions. Shape each portion into a log approximately 1.5 inches in diameter. Wrap each log tightly in plastic wrap and place in the refrigerator to chill for at least 2 hours, or until the dough is firm enough to slice.
Preheat your oven to 350°F (175°C). While the oven is preheating, line two baking sheets with parchment paper to prevent sticking.
Once the dough has firmed up in the fridge, remove it and carefully unwrap the logs. Slice each log into 1/4-inch thick rounds. Arrange the slices on the lined baking sheets, ensuring there is enough space between each cookie for spreading.
For a delightful touch, press a few chocolate chips or colorful sprinkles into the center of each cookie slice before they go into the oven.
Place the baking sheets in the preheated oven and bake the cookies for 12-15 minutes, or until the edges are lightly golden. Remember that the cookies will firm up further as they cool.
After baking, allow the cookies to cool on the baking sheets for about 5 minutes. Then, carefully transfer them to a wire rack to cool completely.
If desired, once the cookies are completely cooled, dust them with a light sprinkle of powdered sugar for an extra sweet and charming appearance.
Notes
For added flair, garnish with fresh berries or a drizzle of melted chocolate.
