Instructions
In a spacious mixing bowl, begin by combining the sifted powdered sugar and the egg whites. Ensure both ingredients are well integrated before proceeding.
Using an electric mixer, start beating the mixture on a low speed for about 1 minute. This initial step will help blend the ingredients together.
Gradually increase the mixer speed to medium and continue beating for an additional 4-5 minutes. You'll know the icing is ready when it reaches stiff peaks, holding its shape firmly.
Once the stiff peaks have formed, introduce the fresh lemon juice and vanilla extract (if desired). Continue mixing on low speed for another minute to ensure these flavors are thoroughly incorporated.
If you’d like to add color to your icing, divide the mixture among several small bowls. Add a drop or two of your chosen food coloring to each bowl, then stir gently until the icing reaches your desired hue.
To prevent the royal icing from drying out while you’re working, cover the bowl with a damp cloth or plastic wrap until you are ready to use it.
