Instructions
In a large mixing bowl, add the finely crushed gingerbread cookies along with the softened cream cheese. Using a spatula or mixer, blend the mixture until smooth and fully combined, ensuring there are no lumps.
Into the cookie and cream cheese mixture, sprinkle the ground ginger, ground cinnamon, freshly grated nutmeg, ground allspice, powdered sugar, and pure vanilla extract. Stir everything together thoroughly until all ingredients are well incorporated and the mixture is homogenous.
Cover the bowl with plastic wrap and place it in the refrigerator for about 30 minutes. This chilling step helps firm up the mixture, making it easier to shape into truffles.
After chilling, retrieve the mixture from the fridge. Use your hands to scoop and roll the mixture into small balls, each about 1 inch in diameter. Place the shaped truffles onto a parchment-lined baking sheet, spaced apart to avoid sticking.
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave the mixture in 30-second intervals, stirring well between intervals, until the chocolate is completely melted and smooth in texture.
Dip each truffle into the melted chocolate, ensuring it is fully coated. Use a fork to lift the truffle out, allowing any excess chocolate to drip back into the bowl.
Before the chocolate coating sets, generously sprinkle the truffles with extra crushed gingerbread cookies or finely chopped nuts for an added festive touch.
Return the coated truffles to the parchment-lined baking sheet. Place them back in the refrigerator for a minimum of 15 minutes to allow the chocolate to harden completely.
