Preheat the oven: Begin by preheating your oven to 350°F (175°C). While the oven is heating, line a baking sheet with parchment paper to prevent sticking.
Prepare the dough: In a mixing bowl, combine the almond flour, psyllium husk powder, garlic powder, onion powder, salt, and pepper. Stir these dry ingredients together until evenly mixed.
Add the egg: Crack in the large egg and mix it into the dry ingredients. Blend until a cohesive dough starts to form, ensuring there are no dry patches.
Knead the dough: Once combined, use your hands to knead the dough on a clean surface until it becomes smooth and elastic. Let it rest for about 5 minutes to loosen up.
Cook the beef mixture: In a skillet, heat the olive oil over medium heat. Add the sliced onions and bell peppers, sautéing them until they are softened and fragrant. Then, stir in the shaved beef, cooking until it is browned. Season the mixture generously with salt and pepper, and remove from heat once cooked through.
Create the cheese sauce: In the same skillet (no need to wash it), add the cream cheese along with half of the shredded mozzarella. Stir constantly over low heat until the cheeses melt and meld together with the beef and veggies, ensuring a smooth, creamy mixture.
Roll out the dough: Take the rested dough and place it between two sheets of parchment paper. Use a rolling pin to roll it out into a rectangle, approximately 1/4 inch thick.
Spread the filling: Evenly spread the warm beef and cheese mixture across the rolled-out dough, leaving a small border around the edges. Sprinkle the remaining mozzarella cheese on top of the filling.
Form the roll: Carefully start at one end and tightly roll the dough up towards the other end to create a log. Make sure to pinch the ends securely to seal the filling inside.
Bake the roll: Transfer the roll to the prepared baking sheet. Bake in the preheated oven for 25-30 minutes or until the roll is golden brown and slightly firm to touch.
Slice and serve: Once baked, let the roll cool for a few minutes before slicing it into individual portions.
