Instructions
Begin by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking.
On a lightly floured surface, roll out the thawed puff pastry to remove any creases and ensure it is pliable. Slice the pastry into 3-inch squares using a sharp knife or pizza cutter.
Take one square of puff pastry and place it on the prepared baking sheet, pressing it down gently in the center.
On top of the pastry, place a cube of Brie cheese, followed by a teaspoon of cranberry sauce, allowing it to rest snugly atop the cheese.
To enhance the flavor, sprinkle a small amount of finely chopped fresh rosemary over the cranberry sauce.
Carefully fold the corners of the pastry square over the cheese and cranberry filling, pinching the edges together to form little bundles that seal in the deliciousness.
To achieve a beautiful golden color, brush the tops of the bundles with the beaten egg wash using a pastry brush.
Finish with a sprinkle of sea salt and freshly cracked black pepper over the tops to amplify the taste.
Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the pastry is puffed up and golden brown. Keep an eye on them to avoid over-baking!
Once baked, remove the bites from the oven and allow them to cool for a few minutes before serving to let the flavors settle.
