1package (8 oz)cream cheese, softened to room temperature
1/2cuppowdered sugar
1teaspoonpure vanilla extract
1cupheavy whipping cream, chilled
8cookiesOreo cookies, roughly chopped (for both filling and topping)
Instructions
Create the Crust: In a medium mixing bowl, combine the finely crushed Oreo cookies with the melted butter. Stir until all the crumbs are evenly coated in butter, forming a sandy texture.
Prepare the Cheesecake Filling: In a large mixing bowl, use an electric mixer to beat the softened cream cheese until it becomes creamy and smooth. Gradually incorporate the powdered sugar and vanilla extract, mixing until the mixture is well blended and fluffy.
Whip the Cream: In a separate bowl, pour in the heavy whipping cream. Use an electric mixer to whip the cream until stiff peaks form, which should take about 2-3 minutes. Be careful not to over-whip.
Incorporate Oreos: Gently fold the whipped cream into the cream cheese mixture using a spatula, being careful to maintain the light, airy texture. Then, add the roughly chopped Oreo cookies, folding them in until evenly distributed throughout the filling.
Assemble the Cups: In individual serving cups or small jars, spoon approximately 2 tablespoons of the Oreo crust mixture into the bottom of each cup. Follow this with a generous layer of the cheesecake filling. Repeat this layering process until the cups are filled, ensuring the final layer is the creamy cheesecake filling on top.
Chill: Place the assembled cheesecake cups in the refrigerator and chill for a minimum of 4 hours, or until they are firm to the touch and fully set.
Serve: Prior to serving, feel free to garnish the top of each cheesecake cup with additional chopped Oreo cookies for added flair and crunch.
Notes
For an adorable touch, include a small decorative spoon with each cup, and sprinkle some crushed Oreos on top for texture and an inviting look.
