Begin by preheating your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.
In a medium mixing bowl, combine the crushed peppermint candies with the peppermint extract. Stir well to ensure the flavor is evenly distributed among the crushed candies.
Using a spoon, scoop the peppermint mixture and form small mounds, each about 1-2 tablespoons in size, on the prepared baking sheet. Make sure to leave some space between each mound, as they will spread slightly during baking.
Place the baking sheet in the preheated oven and bake for about 7-10 minutes. Watch closely until the edges of the mounds start to melt and blend together. Once done, remove from the oven and let the peppermint spoons cool completely on the baking sheet.
While your peppermint spoons are cooling, prepare the chocolate coating. In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 15-second intervals, stirring after each increment, until the mixture is smooth and fully melted.
After the peppermint spoons have cooled and set, dip the top of each spoon into the melted chocolate, allowing any excess chocolate to drip back into the bowl.
Return the chocolate-dipped spoons to the parchment paper. Let them sit at room temperature to allow the chocolate to set, or place them in the refrigerator for faster hardening.
