If using fresh pumpkin seeds, scoop them from the pumpkin, rinse in cold water, and pat them dry.
In a large mixing bowl, combine the cleaned pumpkin seeds with olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, and salt. Add maple syrup if desired.
Divide the seasoned seeds into 8 equal portions and customize each with different spices.
Lay each seasoned batch onto a lined baking sheet in a single layer and roast for 15-20 minutes, stirring every 5 minutes.
Once roasted, cool the seeds completely on the baking sheet.
Enjoy immediately or store in an airtight container for up to two weeks.
