On a clean, flat surface, lay out one tortilla. Place a generous handful of spinach or mixed greens in the center of the tortilla, creating a base for your filling.
Spoon approximately a quarter of the prepared black bean mixture over the greens in the center of the tortilla.
Add a few slices of creamy avocado on top of the black bean mixture for an extra layer of flavor.
To wrap the burrito, fold the sides of the tortilla inward over the filling, then carefully roll it up from the bottom to enclose the filling completely, forming a burrito shape. Repeat this process with the remaining tortillas and filling.
For added texture and flavor, you may choose to place the assembled burritos seam side down in a preheated non-stick skillet over medium heat. Toast each side for 1-2 minutes or until lightly golden brown, carefully flipping to achieve even toasting.
