Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper and lightly greasing it.
In a large mixing bowl, combine the ground chicken, breadcrumbs, chopped cilantro, sliced green onions, minced garlic, grated ginger, Thai red curry paste, fish sauce, soy sauce, beaten egg, lime juice, salt, and black pepper.
Using your hands, mix all the ingredients together gently until just combined, being careful not to overmix.
With clean hands, take small portions of the mixture and roll them into 1-inch meatballs, placing them on the prepared baking sheet.
Once all the meatballs are formed, give the tops a light spray with cooking spray.
Place the baking sheet in the preheated oven and bake for about 20-25 minutes until fully cooked and golden brown.
For an extra crispy exterior, switch the oven setting to broil and broil the meatballs for an additional 2-3 minutes, watching closely to prevent burning.
Remove the meatballs from the oven and allow them to cool slightly on the baking sheet before serving.
Notes
For a delicious dipping sauce, mix soy sauce, fresh lime juice, and a drizzle of honey.
